Peanut Noodle Salad

Peanut Noodle Salad

This salad is slightly special yet surprisingly easy. The hardest part of this dish is preparing the vegetables so that they have the correct consistency.

The best way to do this is to use a mandolin which will be able to slice the vegetables much more easily than you would be able to do yourself!

Ingredients
  • 200 grams of Dry Noodles
  • 1 cup shredded cabbage
  • 1 cup of grated carrots
  • 1 cup of diced radish
  • 4 Spring Onions
  • 1 Red Bell Pepper
  • 1 Bunch of Coriander (Chopped)
  • 3 Jalapenos Chopped
  • Half a Cup crushed Peanuts

Dressing:

  • 2 Cloves of Garlic
  • 1 Inch of Ginger
  • 2 Tablespoons of peanut butter
  • Juice of 1 Orange
  • Juice of 1 Lime
  • 2 Tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 2 tablespoons of agave syrup
  • 1 teaspoon of cayenne pepper
  • Pinch of salt.

 

Directions

  1. Cook the noodles according to the instructions on the packet
  2. When cooked, run the noodles under cold water
  3. Combine with the salad ingredients in a large bowl
  4. Using a processor mix all of the ingredients for the dressing.
  5. Mix all of the ingredients in a large bowl.
  6. Garnish with crusted peanuts
  7. Enjoy.
